Susanti Sako. Study of the Damage Level of Nata De Coco that Circulates in Some Supermarkets in the City of Manado. Under the guidance of Mrs. Lucia Mandey, as Chairperson, Ms. Thelma D.J. Tuju, and Mrs. Ch.F.Mamuaja, as members. This study aims to obtain information about the level of damage to Nata De Coco circulating in several supermarkets in the city of Manado by analyzing total microbes and pH. This research uses non-experimental quantitative method by treating Nata De Coco product types and supermarket types. Before sampling, pre-research was carried out by survey method. The research sample was taken in 3 (three) supermarkets located in Manado City taking as many as 2 (two) types of products / brands that were the same. Then each sample of Nata De Coco was observed 3 (three) times during storage at room temperature. As a control and comparison, cold storage is also carried out. The storage time is 1, 3 and 5 days, respectively. The results show that Nata De Coco has been contaminated by microbes since the first day of the test sample and continues to experience an increase in the number of colonies until observing day 5 at room temperature, except for the A1B1 sample. , A1B2, A2B3 on the 1st day there were no colonies yet, but on the 3rd and 5th day of storage also had a very drastic increase in the number of colonies, the total microbes for Nata De Coco from day 1 were very high, namely 0.5×102 – 17.5×102 . . Nata De Coco pH changes from the first day of testing to the 5th day of observation at room temperature. From these data it can be seen that the longer storage pH tends to decrease, except for the samples stored as a comparison of A1B1 and comparison of A1B2 on observations on day 5 the pH tends to increase. But in general the pH value of Nata De Coco tends to decrease during storage
